Dinner January 17, 2011

Wow what a delicious meal!!! Tonight I made:
Alligator noodle soup
  • Alligator stock (boiled roasted bones and extra meat)
  • Italian style vegetables
  • Buckwheat noodles
I just boiled it all for about 2 hours, and it was amazing. I had all of my roomates, Yes ALL of them come up and say how wonderful it smelled, and the one who tasted it had his eyes light up and say it had just a hint of heat but then was just what the doctor ordered. Quite the compliment if i don't say so myself.

I also made a Shark Steak Sandwich
  • Rare seared shark steak with my special house seasoning on it
  • dijon mustard
  • whole grain bread
Okay so i heated the pan to sear the shark, and i guess i got it a bit too hot and smokey cause i set off the fire alarm : ) whoops. Anyway Bruce the campus safety guy came by to check up on the place, and said that the steak looked and smelled amazing, as did the soup.

Dinner on the table in under 15 minutes, and I got to watch a little top chef to boot!

Gator conclusions

Here is what i learned...
  • Gator meat has lots of connective tissue
  • 1 lb. bone in gator is barely enough meat for one meal
  • Gator meat would be best slow cooked, (smoked, braised, etc.)
  • Peanut Butter and Jelly in a dorm room is an essential when trying exotic foods : )
On the bright side, i roasted the bones of the meat and then boiled them for about an hour and a half. The broth that was created is killer, so i am looking forward to some gator meat stew later in the week, maybe even with some shark steak in it! Keep reading the blog for the recipe.

Tonight for dinner I am making a barbeque spiced Alligator loin.

Ingredients:
1 lb. bone in alligator loin
1 tbsp. honey
1 tbsp. apple cider vinegar
1 tsp. garlic powder
1 tsp. onion powder
1 tbsp. chili powder
1/4 c. Worcestershire sauce
1 tbsp. liquid smoke

Microwave the honey for 20 seconds and mix with all the other ingredients. Marinate the alligator in the mixture for 1 hour or up to 6 hours. Roast the alligator in a 400 degree oven for 45 minutes, basting with the marinade every 20 minutes and at the end. Serve with a roasted potato salad. (recipe follows)

Roasted Potato Salad
1 Large russet potato
1 tbsp. miracle whip light
1 tbsp. dijon mustard
Salt and pepper to taste
1 tsp. honey
1/4 c. chopped onions
1/4 c. chopped celery (1 large stalk)

Fork and microwave the potato for 3 minutes on high. Set the broiler to low, and chop up the potato into 1/2 in. cubes. Spread out the potato on a foil lined baking sheet and spray with butter flavored cooking spray. Let roast for 20 minutes or until golden brown. Remove from the oven, spray with more cooking spray, and sprinkle with salt and pepper. While those cool, mix the remaining ingredients in a large bowl, add the cooled potato and mix to combine. Let cool in the fridge.
