Dinner January 15, 2011

Tonight for dinner I am making a barbeque spiced Alligator loin.

Ingredients:
1 lb. bone in alligator loin
1 tbsp. honey
1 tbsp. apple cider vinegar
1 tsp. garlic powder
1 tsp. onion powder
1 tbsp. chili powder
1/4 c. Worcestershire sauce
1 tbsp. liquid smoke

Microwave the honey for 20 seconds and mix with all the other ingredients. Marinate the alligator in the mixture for 1 hour or up to 6 hours. Roast the alligator in a 400 degree oven for 45 minutes, basting with the marinade every 20 minutes and at the end. Serve with a roasted potato salad. (recipe follows)

Roasted Potato Salad
1 Large russet potato
1 tbsp. miracle whip light
1 tbsp. dijon mustard
Salt and pepper to taste
1 tsp. honey
1/4 c. chopped onions
1/4 c. chopped celery (1 large stalk)

Fork and microwave the potato for 3 minutes on high. Set the broiler to low, and chop up the potato into 1/2 in. cubes. Spread out the potato on a foil lined baking sheet and spray with butter flavored cooking spray. Let roast for 20 minutes or until golden brown. Remove from the oven, spray with more cooking spray, and sprinkle with salt and pepper. While those cool, mix the remaining ingredients in a large bowl, add the cooled potato and mix to combine. Let cool in the fridge.
